Do I have to use whole milk?

This is a strange one. You’d think all whole milk would give the same results. But it doesn’t.
The advice here is to experiment. Try different milks but, if you find one that really works well, stick with it. There is probably a very valid scientific reason why some brands foam better than others. But, it’s not something I can get my head round.
So, if your favourite brand of whole milk froths well don’t be tempted to try another. Stay with what you know.
Does milk taste different when it’s been frothed?
It does. Or at least it appears to do so. When you heat milk the lactose within it, for want of a better word, melts. This makes the milk appear sweeter which is why that wonderful cappuccino you get from the coffee shop tastes so nice without you having to ladle spoonfuls of sugar into it.
The taste doesn’t change so much when you froth cold milk. However, the frothing process does warm the milk to a degree (pun intended) so even cold milk will taste slightly sweeter once it’s been frothed.

Which type of milk frother should I buy?

If you’re happy with the coffee maker you have then stick with it to make the espresso base you need for all your frothy coffee creations. You just need a milk frother to go with it.
If you want speed above all else go for a handheld frother. They are easy to use, very cheap to buy and you can use them for different whisking jobs in the kitchen too. Of course the drawback here is that if you want to use warm milk you’re going to have to heat it in the microwave and use a milk frothing jug. Which just adds another layer of faff.
The alternative is an automatic milk frother which can heat and froth your milk. You could also use a manual frother such as the Bodum Latteo which can be put in the microwave to heat the milk.
If you don’t want to make the component parts separately go for a barista coffee machine. Depending on budget these machines grind the beans, brew the coffee, heat and froth the milk. They are one stop devices and if you want to emulate the baristas in Starbucks or Costa this is the type of machine you should go for.
